Post: Assistant Production Manager

Reporting To: Factory Manager / Production Head

CTC: ₹6,00,000 – ₹9,00,000 per annum

Industry: FMCG – Bakery & Confectionery (Packaged Cakes)

Role Overview

We are looking for a hands-on Assistant Production Manager with mandatory packaged cake manufacturing experience to support daily factory operations and ensure smooth execution of production plans.

The role is execution-focused, requiring strong shopfloor presence, process discipline, and coordination across production, quality, and maintenance. The candidate will play a key role in stabilizing production, reducing variability, and ensuring consistent output and quality in a fully/partially automated cake manufacturing setup.

Key Responsibilities

Production Execution & Line Management

Execute daily and shift-wise production plans as per schedule.
Monitor output, line speed, and downtime; take corrective actions in real time.
Ensure proper manpower deployment across lines and shifts.

Process Control & Consistency

Maintain consistency in product weight, texture, and appearance.
Monitor critical process parameters (batter viscosity, baking time, temperature profiles, deposition accuracy).
Identify deviations and coordinate with QA and maintenance for immediate correction.

SOP Implementation & GMP Compliance

Ensure strict adherence to SOPs, GMP, and GHP practices on the shopfloor.
Enforce hygiene practices (hairnets, gloves, sanitation, allergen control).
Train operators and helpers on standard procedures and discipline.

Loss & Wastage Control

Track and control wastage (RM loss, rejections, giveaway, packaging loss).
Identify root causes of variation (weight fluctuation, under/overfill, rejection).
Implement corrective and preventive actions (CAPA).

Coordination with Quality Team

Ensure in-process quality checks are followed.
Support QA in trials, validations, and product approvals.
