Role And Responsibilities : Kitchen Operations ● Understanding of our existing menu with a hands-on approach in production of dishes ● Works to ensure the quality of products are maintained ● Ensure that all dishes produced are as per recipes and presentation standards set ● Ability to identify gaps in production/ preparation/ presentation standards and training the team to overcome them ● Handle Guest complaints / suggestions / requests directly to achieve high Guest satisfaction ● Plans the roaster and leave for team ensuring efficient and smooth operations ● Provides training / guidance / motivation the team members to achieve highest quality standards and Employee progressive growth ● Plan effectively Operating equipment for the kitchen to ensure a smooth operation ● Drives positive change in the kitchen team and ensures the team is productive and efficient. ● Operate in a safe and environmentally friendly way to protect guests’ and employees’ health and safety, as well as protect and conserve the environment ● Attend required meetings/ trainings and conduct daily briefing with the team members ensuring efficient communication, to run the kitchen smoothly ● To visit and assist in other locations of Pasta Street if required. Hygiene & Sanitation ● Participates in all cleaning and hygiene related activities ● Maintain the highest levels of hygiene standards in food production and BOH operations ● Trains all team members on hygiene standards ● Checks personal hygiene and grooming standards ● Checks all raw materials received at the kitchen on periodic timeframe and takes any corrective action if required, ● Develops an ability to identify lapse in hygiene standards and trains the team to overcome them. ● Plans and executes daily/ weekly cleaning schedules for the kitchen and BOH ● Ensures kitchen team following proper storing/ thawing procedures ● Works on elimination of foreign objects/ materials/ insects in food preparation by taking proper precautions. Administration ● Prepare and review store requisitions, purchase order. ● Manage food cost by ensuring weekly consumptions are studied and corrective actions are take. ● Conduct competition checks to ensure being updated and competitive in the local market ● Drive together with the Multi unit Chef and Restaurant manager for all events in the outlet as per the annual promotional calendar ● Maintains records of food trails/ wastage and takes corrective action Key Skills : ● Diploma/Graduation should be essential for the post. ● Excellent communication skills with a strong sense of understanding. ● Should be having good knowledge of food production methods .To be thorough and pay attention to detail ● Should be having team management skills. ● Must have the ability to organize your time and workload ● Should be able to do multitasking. ● Should be having the ability to monitor your own performance and that of your colleagues. Experience : Must have 6-8 years of experience in an upscale casual dining restaurant set up and must have minimum 1.5 to 2 year experience in the same position.
